1. Ceviche, the pride of Peru

5. Stuffed Rocoto
The stuffed rocoto, typical of Arequipa, is ideal for spicy lovers. It is a rocoto (similar to a bell pepper, but with much more character) stuffed with meat, onion, aji panca bell pepper and spices, au gratin with cheese.
